Mississippi Spiced Pecans

I don't know about you, but I am always looking for a little snack that will carry me till the next meal. That is when the healthier snack and junk food have their confrontations. Junk food tents to wins, if we don't have some healthier choices to the rescue. I cannot stress how important it's to be prepared for those "I can eat cow moments". In a moment of weakness, resolutions are dune. So, if you are going to torture yourself with a new diet or just change your eating habits for healthier ones, BE PREPARED.  Keep some good snacks choices in your office, car, and at home to avoid ruining any efforts already put in maintaining a diet. I came across this recipe a while ago, and I thought I needed to share it. We all have read about the benefits nuts brings to our health, and these pecans are just delicious. Warning! ...make small portions bags to avoid grabbing handfuls. These pecans are so good that over eating them can be rather easy.

Ingredients

Total Time: 20 minutes
1 pound pecan halves
1 tablespoon packed dark brown sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon chopped fresh thyme
1/4 teaspoon chopped fresh rosemary
1/2 teaspoon freshly ground pepper
A pinch of cayenne pepper
2 tablespoons extra-virgin olive oil

Directions
Preheat oven to 350°F.
Spread pecans on a large baking sheet. Roast until fragrant, about 12 minutes. Shake baking sheet or stir pecans a couple of times so they don’t burn.
Mix brown sugar, salt, thyme, rosemary, pepper and cayenne in a small container. In a large container, toss the roasted pecans with oil till well coated. Sprinkle with the spice mixture and toss again. Serve warm or let cool completely and store in an airtight container.
