Celery . . . don't lose it, use it!

Oh celery! If only we could have some when we need you!  Our family is not a celery lover. The truth is that we mostly use it when a recipe calls for it and then we have to take a trip to the store to buy some. We will cut some for the recipe and the rest will go back to the refrigerator till it has gone bad. It never fails; if you don't use it, you lose it!
Recently I read an article about growing celery indoors and I believe we have found the answer to our prayers. We can grow another full stalk of celery from the part we normally throw away.  So, we cut the top of the celery stalk and put the base in water and now we are growing celery.

Soon, we will be transplanting it into a container with soil and we will have celery ready to use any time we need some. We have grown green onions that same way and I have to say, I can't remember the last time we had to buy them. I know it has been at least two years and I am looking forward to having the same results with celery!  If nothing else, it sure makes a decent looking centerpiece in a vase while the center is growing.  It is our understanding that eventually the outside stalks will rot and the center will then be transplanted to a container with soil.  Stay tuned . . .

I'm doing that with my green onions and its great! I'll have to try with celery too, because just like you, I only buy it if needed for a specific recipe and the rest rots away in the fridge...
